We trace umami from clarity to depth and back again: starting with quiet sweetness paired with a hand made seasonal Wagashi(Japanese sweet), entering two courses of specialty matcha, then returning to deeply aromatic yet light tea leaves. Each course reveals a different way umami can feel-expansive, dense, and finally resolved.
